Interior skins

Could leaving the interior skin off where your elbows would go, give you more elbow room?? Would this cause any structural issues ?

It likely would cause issues. One of the reasons that the skins exist at all is to provide strength in addition to the outer skins. While you likely could remove some materials from certain places, you'd need to be careful where you're removing it from, and how much you're removing. There are also several vertical channels in that general area that you'll need to work around. Looking at sheets 77 and 80 of the Fuselage manual, I don't see any way of removing skins in order to get more room, since there are 4 channels you're working around in that same area.
